Ingredients:
1 egg
1 cup milk, 250 ml.
2 tablespoons oil, 30 ml.
1 cup white flour, 250 ml.
1/2 teaspoon salt, 2 ml.
2 tablespoons baking power, 30 ml.
2 tablespoons sugar, 30 ml.

Instructions:
Beat egg, milk, and oil with a whisk. Add sifted dry ingredients and beat with a whisk until smooth. Let stand and watch. The batter will rise right before your eyes because of the baking powder! Without stirring, gently spoon out the batter onto a griddle that has been preheated to 375°F, 190C. Turn once and serve with real maple syrup and real butter.

Notes:
This recipe makes about six 4" pancakes, and they really do fly off our guests' plates. Very easy to make.
