Cook Time: 30 min

Ingredients:
1 stick butter or margarine is better
1 large onion
4 cups mild, chopped green chili, Bueno brand, frozen
8 tablespoons flour
2 teaspoons garlic powder
2 teaspoons salt
1 teaspoon black pepper
Oil as needed
4 cups bouillon or stock, hot: boil water add cubes, cover & turn off heat

Instructions:
Sauté onions in butter until they are translucent. Add green chili peppers, sauté 2-3 minutes if defrosted, 20-30 minutes if frozen. In a small bowl, mix flour, garlic powder, salt, black pepper together. Stir in oil, a little at a time, until the mixture is not hard to turn, but not runny (consistency like honey). Add flour mixture to the chili & stir 2-3 minutes, or until hot. While stirring constantly, add hot stock. Bring to a boil & lower heat. Simmer 10 minutes. Makes 78 ounces.

Notes:
Prepare the day before. Freezes nicely. Great on breakfast burritos or as the sauce for other dishes.
