Cinnamon Mornings and Chocolate Dreams

Cook Time: 1 hrPrep Time: 10 min
Yield: 8 servings 

Ingredients:
12 slices day old bread, crust removed, in 1 inch cubes
16 ounces cream cheese, cubed
1 cup blueberries, fresh or frozen
12 eggs
2 cups milk
1/3 cup maple syrup or honey

Sauce:
1 cup sugar
1 cup water
1 tablespoon butter
2 tablespoons corn starch
1 cup blueberries



Instructions:
In 9"x13" dish, layer half of bread cubes, cream cheese cubes, blueberries, 2nd half of bread cubes. Beat eggs, add milk and syrup. Pour over bread. Cover and chill overnight. Remove from refrigerator 30 minutes before baking. Bake, covered, 30 minutes at 350°F. Uncover and continue to bake 25-30 minutes or until center is set.

Sauce:
In a sauce pan, combine sugar and cornstarch with water. Bring to boil over medium heat, boil 3 minutes, stirring constantly. Stir in blueberries, reduce heat. Simmer 8-10 minutes. Stir in butter.


Notes:
Can substitute strawberries, blackberries or cherries for blueberries.
