Ingredients: 2 cups all-purpose flour 1 cup sugar 2 teaspoons baking powder 1/2 teaspoon salt 1 egg 1 cup milk 1/3 cup oil 1 cup blueberries, fresh or frozen Instructions: In a bowl combine flour, sugar, baking powder and salt. In another bowl mix egg, milk, and oil. Add liquid ingredients to dry ingredients and stir until moistened. Fold in blueberries. Fill paper lined or greased muffin cups 3/4 full. Sprinkle top with large grain sugar. Bake at 350°F for 25-30 minutes. Cool 5 minutes before removal. Notes: In place of blueberries you may add: Raspberries, blackberries, chopped rhubarb, chopped peaches, chocolate chips. |
