Ingredients: 9 fresh eggs 2 cups diced vegetables - assorted in season. Peppers, carrots, celery & basil or broccoli, red pepper & oregano or zucchini, tomatoes, onions & rosemary. Shredded cheese: cheddar, swiss or gouda. Instructions: Beat eggs and add choice of vegetables and 1 type of cheese. Mix. Spray a 6 muffin teflon pan and pour into each. Bake for 9 minutes at 350°F. Serve either hot or at room temperature accompanied with fresh sliced tomatoes, roasted red petite potatoes and multigrain bagel with a strawberry butter. Notes: This wonderful egg dish enables you to customize to a particular guests taste. Enjoy!!! A side dish of grilled Canadian Bacon would be a treat. |
