Ingredients: 1 dozen eggs, beaten 2 full cups - shredded zucchini, mushrooms, Italian seasoning, tomatoes & red peppers 1/2 cup low fat milk or soy milk 1 cup of shredded old aged cheddar Instructions: Mix all ingredients together. Pour into a greased medium sized baking dish. Add 1/4 of cheese on top. Bake for 350°F for 40 minutes. Serve in squares on individual plates garnished with slices of orange, grapefruit and strawberries. Bon Appetite!! Notes: This wholesome egg dish allows you to take the local vegetables and feature them on your table. Enjoy! |
