Cinnamon Mornings and Chocolate Dreams

Yield: 8 servings 

Ingredients:
1 package yeast
1/2 cup warm water
2 cups milk, warmed
1/2 cup butter, melted
1/4 teaspoon salt
2 teaspoon sugar
2 cups flour
2 eggs, beaten
1/4 teaspoon baking soda

Instructions:
Dissolve the yeast in the warm water in a large bowl; let stand 5 minutes. Add the milk, butter, salt, sugar and flour to the yeast and beat until smooth. Cover bowl with plastic wrap and let sit at room temperature overnight. Batter can be kept in refrigerator for several days.

In the morning before cooking the waffles, add the eggs and baking soda, stirring till well mixed. The batter is thin. Pour 1/2 cup batter into a hot greased waffle iron. Bake the waffles until there is no steam escaping from the waffle iron and the waffles are crisp. Serve at once.

Variations: Add chopped pecans or fresh coconut and serve with fresh fruit sauce.
