Ingredients: 3 eggs ½ cup butter, melted ½ fresh lemon juice 1 cup sugar Zest of 1 lemon Instructions: In top of a double broiler, beat eggs until frothy. Stir in lemon juice, sugar, zest, and melted butter. Place over a simmering water. Stir constantly for 20 minutes. The mixture should become slightly thickened. Remove from heat and spoon into a pint sized container. Cool to room temperature, cover and refrigerate for at least 2 hours before serving. Notes: Keeps well for two weeks, refrigerated. |
