Cinnamon Mornings and Chocolate Dreams

Cook Time: 30 minPrep Time: 20 min
  

Ingredients:
3/4 of a 10 ounce package fresh washed spinach
3/4 stick butter, melted
10 eggs
1/8 teaspoon nutmeg
1/2 pound Baby Swiss cheese, grated
1/2 pound feta cheese, crumbled
1/2 cup roasted red pepper, chopped
Grated parmesan, optional

Instructions:
Pre-heat oven to 350°F.

Cook spinach on plate with small amount of water in microwave about 1-2 minutes on high. Dry thoroughly and allow to cool. Melt butter in microwave about 3 minutes at 40%. Set aside to cool.

Beat eggs in large bowl and add nutmeg. Stir in cooled butter then cheeses and roasted red peppers. Chop spinach and stir into egg mixture. Pour into sprayed 9"x13" glass baking dish and distribute evenly. Sprinkle with parmesan, if desired.

Bake 30 minutes. Loosely cover with aluminum foil if browning too quickly. Rest, covered 5 minutes. Cut into squares and serve.
