Ingredients: 1 package Yellow cake mix 1 egg slightly beaten 1/3 cup butter Cheese Filling: 1 cup ricotta cheese 2 eggs ¼ cup sugar 2 tablespoon cornstarch 1 teaspoon vanilla 1 29 oounce can pear slices, drained 2 tablespoon flour ¼ teaspoon cinnamon Instructions: Preheat oven to 350°F. Grease and flour 10" springform pan. In a bowl, combine cake mix and egg. Stir until blended. Use a pastry blender and cut in the butter until the mixture resembles coarse crumbs. Reserve 1/3 cup of crumbs for the topping. Press remaining crumbs on to bottom and one inch up side of the prepared pan. Make filling in a bowl by combining the cheese, eggs, sugar, cornstarch and vanilla. Pour filling into the pan. Cut each pear slice into 3 more slices and arrange the slices over the filling. To reserved crumbs, add flour and cinnamon and toss with a fork. Sprinkle crumb mixture over the filling and pears. Bake 60 - 65 minutes. Cool in pan and then remove side of pan. Cool, refrigerate until ready to serve. |
