Ingredients: 1 1/2 cu diced rhubarb 1 cup brown sugar 1/2 cup sugar, plus 2 tbsp. 2/3 cup cooking oil 2 eggs 1 cup milk 1 tsp. salt 1 tsp. vanilla 2 1/2 cups flour 1 1/2 tsp. baking powder 1/2 tsp. baking soda Instructions: Mix together both sugars with oil; mix in eggs well, then mix in milk. Add remaining ingredients, mixing well. Pour into 2 9x5 loaf pans. Top each with 1 tsp. of melted butter and 1 tbsp. of sugar. Bake 1 hour at 350 degrees or until done. |
