Ingredients: 32 oz. bag frozen O’Brien Potatoes
1 roll (1 lb) sage flavored bulk sausage, cooked
8 hard boiled eggs, chopped
1 can cream of mushroom soup
1/2 soup can milk
2 green onions, chopped
2 cups Colby-Jack cheese, shredded
Salt & Pepper to taste
Instructions: In eight 16oz. greased ramekins, or a 9x13” greased casserole, layer potatoes, sausage and eggs. Combine soup and milk, then pour over other ingredients. Sprinkle top with cheese, then green onions. Bake in a 350° oven 30-35 minutes.
