Yield: 6 servingsInactive Prep Time: 5 min

Ingredients:
12 large eggs
1 ½ cups milk
1 ½ tsp vanilla
1 heaping tsp butterscotch pudding mix
1 loaf Italian, French, Portuguese or similar bread
1 cup light brown sugar
1/4 lb butter (1 stick)
2 tbsp maple syrup
1/2 tsp cinnamon
1 dash nutmeg

Instructions:
Slice bread diagonally into 3/4 to 1 inch slices (16 for 8 people).
Blend: eggs, milk, vanilla, and pudding mix and soak bread in mixture until absorbed.
Arrange wet bread slices in 9x13 inch greased pan so they overlap each other slightly.
Melt together: brown sugar, butter, maple syrup, cinnamon and nutmeg and pour over bread so that it is evenly distributed between the slices.
Cover and refrigerate overnight. Bake uncovered at 375 degrees F for 50 minutes. Sprinkle with pecans and sliced bananas. Serve with warm maple syrup and bacon or sausage.

Notes:
Optional: Arrange thinly sliced apple slices between each slice of bread before covering with melted butter/brown sugar mix
