Cinnamon Mornings and Chocolate Dreams

Whether you're hosting a formal get-together or need a quick brunch idea, this book will spark your imagination and your appetite.

Cook Time: 5 minPrep Time: 10 min
Yield: 4 servings 

Ingredients:
3 eggs, separated
1/4 cup all-purpose flour
3/4 cup ricotta or cottage cheese (smooth is
best)
1/4 tsp salt
2 TBSP sugar
1+ TBSP grated lemon rind
1/4 cup melted unsalted butter



Instructions:
Mix well, all ingredients except egg whites.
This can be done up to an hour ahead (cover).
When all of your guests are ready for their
main course, then and only then, beat the egg
whites to the stiff peak stage (a Kitchenaid
works wonderfully for this) and FOLD gently
into the mixed ingredients. Use a spoon to
drop mix onto grill and cook until lightly
browned, then flip and repeat. Serve with
REAL maple syrup, a light sprinkling of icing
sugar, and a grating of lemon rind on top.
Makes 4 servings of 3 each.
