Cinnamon Mornings and Chocolate Dreams

Cook Time: 5 minPrep Time: 15 min
Yield: 4 servingsInactive Prep Time: 5 min

Ingredients:
1 1/2 cups skim milk
3/4 cup oats (quick or regular)
1 cup flour
1 1/2 tsp. baking powder
3/4 tsp. cinnamon
1/4 tsp. bakking soda
1 beaten egg and 3 egg whites (or two whole eggs)
1 tbsp. cooking oil
2 tbsp. molasses
1/4 cup chopped pecans

Instructions:
Heat milk over low heat until hot (not boiling. Stir in oats and remove from heat. Let stand 5 minutes. Add next 4 ingredients, then add next 3 ingredients and stir into oat mixture. Add nuts. Cook until golden brown in lightly greased skillet or griddle. Serve with real Wisconsin maple syrup and butter.

Notes:
My guests love these pancakes. Especially health minded folks enjoy these healthy pancakes. You could eliminate the egg yolks all together and just use egg whites.
