Ingredients: 4 large baking apples (Arkansas Blacks do nicely
or Pennsylvani Rome Beauties)
1-1/2cups prepared mincemeat (canned or packaged)
FOR LEMON SAUCE:
2 eggs
2/3cup sugar
1/2cup milk
6T butter, melted
2T lemon juice freshly-squeezed (no substitutes!)
Grated peel of 1 lemon
Instructions: Core apples being careful not to cut through the bottom. Pare 1/3 of way down from stem end. Fill centers with prepared mincemeat. Place in baking dish and add hot water to cover about 1/4 inch.
Cover and bake at 350 degrees for 45 to 50 minutes or until tender. Serve warm with Lemon Sauce.
LEMON SAUCE:
In double boiler, beat eggs until light yellow. Add sugar gradually and beat until fluffy. Cook over hot water, stirring constantly, until mixture coats the spoon. Serve warm over the apples.
Notes: Baked apples are a delightful treat in the Autumn. When my children were small (pre-school), I'd pile them in to the back of my MGB and whiz off to the farm country to get fresh eggs and thick cream at one farm, freshly-cured bacon, scrapple and porkchops
