Ingredients: 2 cups frozen squash blend (yellow squash, zucchini squash, red peppers, white onions) 1/2 of small purple onion 2 cloves garlic 6 eggs 1/4 cup 2% reduced fat or skim milk 1 cup sharp cheddar cheese 1 lb. turkey sausage teaspoon curry powder Instructions: In frying pan, fry turkey sausage. While turkey is cooking, chop small purple onion and garlic. When sausage is almost done, put in onion and garlic. Put temperature on simmer and continue to heat while cooking vegetables. In small amount of olive oil, saute frozen squash blend on simmer in covered skillet until tender. Stir in a teaspoon of curry powder and remove from skillet. Drain turkey sausage and blend turkey sausage with vegetables. Set aside. Prepare eggs by breaking eggs in bowl, add dash of salt and teaspoon of pepper. Add 1/4 cup reduced fat or skim milk. Beat eggs to blend milk and seasonings into eggs. Start by lightly spraying a skillet. Please sausage and vegetable mixture in bottom of skillet. Allow skillet to heat up on medium with sausage and vegetable mixture. After skillet and ingredients have heated, pour egg mixture on top and allow eggs to cook about 3 to 5 minutes until eggs start to harden. After eggs have started to harden, place sharp cheddar cheese on top of eggs and allow them to cook 2 more minutes. Remove from heat. Your Squash Frittata is ready to serve. Notes: If you use a decorative skillet or bowl, this dish can be served directly from the skillet or bowl.
