Ingredients: 2 cups flour
1 Tbsp baking powder
1 tsp baking soda
3/4 tsp salt
1/2 cup sugar
2 large eggs
3/4 cup buttermilk
3 oz melted butter
2 tsp grated lemon zest
2 tsp vanilla
1 1/2 cup blueberries
Topping:
2 Tbsp sugar mixed with 1/2 tsp cinnamon.
Instructions: Preheat oven to 400 degrees. Grease 12 muffin cups with cooking spray, then flour them. Sift together flour, sugar, baking powder, baking soda and salt. Combine eggs, buttermilk, butter, lemon zest and vanilla. Stir into dry ingredients just enough to combine. Fill muffin cups three quarters full. Top each muffin with a sprinkling of cinnamon sugar. Bake 20-25 minutes or until golden brown. Best served piping hot!
