Yield: 12 servings 

Ingredients:
2/3 cup quick cooking grits, uncooked
2 cups water
2 cups evaporated skim milk
1 1/2 cups shredded Cheddar cheese
1 1/2 cups cooked ham, chopped
6 eggs, beaten
1 tbsp. fresh, chopped parsley (or 1/2 cup each, chopped-green onion & green pepper
1 tsp. dry mustard
1 tsp. hot sauce
1/2 tsp. salt
Vegetable cooking spray



Instructions:
Cook grits in water per pkg. Directions, leaving out salt. Combine cooked grits with rest of ingredients, mix well. Pour mixture into "sprayed" 9x13" casserole dish. Bake at 350 degrees for 35-40 minutes or until set.
