Ingredients: 1 lb dried wheatberries 3 qts water 1/4 lb dried cranberries 1/4 cup diced sweet onion 1/4 cup minced fresh herbs dash kosher salt 1/4 cup apple cider vinegar 2 Tbsp xtra virgin olive oil Instructions: Boil wheatberries for around 1 hour, they should still "pop" in mouth. Strain In large bowl toss: wheatberries,cranberries, onion & herbs. Mix salt and vinegar and pour over salad add olive oil and toss. Let salad sit for at least 30 minutes. Flavor is better the longer it sits. Notes: Very easy, very tasty and very healthy!! |
