Cinnamon Mornings and Chocolate Dreams

Cook Time: 15 minPrep Time: 10 min
Yield: 4  

Ingredients:
4 Eggs
3/4 Tsp. Salt
1 Tsp. Sugar
1/4 Tsp. Almond or Vanilla Extract
1 Cup Flour
1 Cup Milk
1/2 Stick of Unsalted Butter


Instructions:
Whisk eggs, milk, flour, sugar and salt in large bowl until well blended. Let stand at room temperature for 30 minutes.

Heat oven to 475 degrees.

Divide butter between into two 9" pie plates. Place in oven until butter melts. Remove pans, swirl butter to coat sides. Divide batter between pans.

Bake on lowest rack of oven until pancakes are golden, set in center and rise high above sides of pan,
10-14 minutes. Sprinkle with powdered sugar and serve immediately. Variation: sprinkle with sugar, fresh berries and a squeeze of lemon juice.
