![]() 4 ½ lbs. scallops ¾ c. butter ¾ c. pale dry sherry 6 TBS flour 1 ½ tsp paprika 3 dashes salt 3 dashed pepper ¾ c. cream Crumb Topping: 12-18 slices fresh bread ¾ c. butter 6 TBS chopped chives Dash salt & pepper Instructions: Saute scallops in butter just until done. Stir in sherry. Simmer 3 min. Stir in flour, paprika, salt and pepper. Stir in cream until thickened. Put coated scallops in shells. Remove bread crusts and break into small soft crumbs. Melt butter. Lightly brown crumbs. Add chives and seasonings. Sprinkle over filled shells. Bake at 375 degrees for 20 min until golden brown. Serve at once. Makes 18-36 servings. |
