Cinnamon Mornings and Chocolate Dreams

Ingredients: 4 firm Bosc pears, cored & sliced into eighths 3 tablespoons chilled butter, cut into small cubes ¾ cup apple cider ½ cup honey 2 tablespoons corn syrup 1 tablespoon fresh lemon juice 2 teaspoons vanilla extract Dash salt Instructions: Preheat oven to 400 degrees F. In a 13 x 9 inch glass baking dish sprayed with cooking spray, place pears in a single layer. Dot with butter. Set aside. Combine cider, honey, corn syrup, lemon juice, vanilla and salt in small saucepan and bring to a boil. Pour over pear mixture. (May be prepared to this point the night before, cooled and covered, then refrigerated overnight.) Cover and bake at 400 degrees F.for 25 minutes. Uncover and bake an additional 30 minutes, or until the pears are tender, basting occasionally. Remove from oven and let stand for 10 minutes. Serve warm with Sour Cream Sauce. (Recipe below) Sweet & Sour Cream 1 cup low-fat sour cream 2 tablespoons light brown sugar Place sour cream into small bowl. Add brown sugar and stir vigorously until smooth. Let stand for 20 minutes to blend flavors. Notes: This is a delicious fruit course, appropriate for either breakfast or an elegant light dessert. |
