![]() Pancake 1/4 cup butter 2/3 cup flour 3/4 cup milk 2 eggs 1/2 teaspoon salt Apple Filling 2 tablespoons butter 2 teaspoons cornstarch 1 tablespoon cold water 1/3 cup firmly packed brown sugar 1/2 teaspoon cinnamon Dash clove powder & allspice (optional) 2 medium cooking apples, cored and sliced thin 1/2 cup pecan halves 1/4 cup raisins or currants Instructions: Heat oven to 400°. In a 9' pie plate melt 1/4 lb. butter in oven 2-4 minutes. In a large bowl mix flour, milk, eggs and salt. Beat 2-3 minutes. Pour batter into buttered pie pan. Bake 25 minutes until brown. In a 10-inch skillet melt 2 tablespoons butter. In a small bowl mix cornstarch mixture into melted butter in skillet. Cook over medium heat stirring constantly until sugar dissolves and mixture thickens. Stir in apples, pecans and raisins or currants. Continue stirring constantly until apples are evenly coated and crisply tender. Spoon filling into hot pancake. Cut into wedges and serve immediately. Enjoy!! |
