![]() Ingredients 2 tablespoon olive oil 1 teaspoon garlic ½ each onion small diced 1 stalk celery small diced 1 each red pepper small diced 1 each bay leaf 1 ½ cups paella rice (Spanish medium grained) 2 ½ cups vegetable stock 2 teaspoons saffron Salt and pepper to taste Instructions: Cooking method Heat the oil in a pan. Add the vegetables and sauté until they are tender. Add the rice and stir until the rice is coated with the oil. Add the stock, saffron and bay leaf. Bring to a simmer, reduce heat and cover with the lid. Simmer rice for 25 minutes until the liquid has been absorbed and the rice is tender. Season to taste with salt and pepper. Finish the rice by drizzling olive oil over the top. This dish can be combined with many different items to make it a entrée. At the restaurant, we feature a seafood paella with shrimp, salmon, crab. Notes: Paella: (pie-ay-yuh) (noun) 1. A technique for making rice dishes. The word paella comes from the Latin word patella meaning pan.
