Ingredients: 6 cups flour
3 Tbls baking powder
2 cups brown sugar (light)
1 tsp of salt
3/4 cup raisins (soaked in water)
2 egg yolks mixed with milk (free range, grain fed)
1 3/4 cups margarine (room temperature)
2 egg whites
Instructions: Mix together dry incredients, excluding raisins.
Blend yolks and margarine until smooth.
Add to dry mixture.
Add raisins.
Knead mixture and roll out dough on floured surface, to 1 cm thickness.
Cut into 3 inch circles and place on lightly greased baking sheets.
Brush with egg whites and sprinkle with brown sugar
Bake at 400 until done (about 8-10 minutes)
Serve with fresh butter, and homemade jams.
Notes: Baking time will vary with altitude as well as thickness of dough.
Watch carefully and do not overcook.
