Ingredients: 5 large peaches, peeled and quartered (or 4 cups of canned, drained) (Save 1/2 cup diced peaches) 1 cup plain yogurt 1/4 cup fresh oranage juice 1/4 cup fresh lemon juice 1 T. Sherry fresh mint for garnish Instructions: Puree peaches with sugar in blender. Blend in remaining ingredients. Stir in diced peaches by hand. Refrigerate overnight. Drizzle vanilla yogurt on the end of a fork on soup to create a design. Garnish with mint. Serve in bowl with a white paper doily under it - pretty as a picture. Serves 6. Notes: If you serve this with peach colored placemats and napkins it looks fantastic. |
