Ingredients: 4 egg yolks 8 T lemon juice scant ¼ t salt scant 1/8 cayenne pepper dry mustard and white pepper to taste 4 T unsalted butter Instructions: In a blender container combine egg yolks, lemon juice, salt, and other spices. Blend on high speed for one minute. In a small saucepan melt butter. Turn on blender and add the melted butter through the top, at first a few drops at a time, then in a thin stream once the mixture “catches” (emulsifies). Catching will take about a minute. Serve warm. Notes: This is to be served with Eggs Benedict with Herbed Tomatoes (recipe elsewhere on this site). |
