Ingredients: 4 eggs, separated 3 T sugar ½ t salt 1 c milk 2 t fresh lemon juice 2 T grated lemon rind ½ stick butter, melted and cooled 1 c all-purpose flour Lemon Cream for topping (see separate recipe) Instructions: Melt butter. Cool. Grate lemon rind. Squeeze juice (also 2 ½ T for Lemon Cream). Prepare and cool Lemon Cream. In a medium mixing bowl beat egg whites until stiff but not dry and set aside. In a second medium mixing bowl beat egg yolks with sugar and salt. Blend in milk, lemon juice, rind and butter, heating well. Sift in flour and fold in egg whites. Bake in a pre-heated waffle iron until golden brown. Serve right away with Lemon Cream. Notes: Guests are delighted with both waffles and cream! |
