Yield: 6 servings 

Ingredients:
6 Toasted English Muffins
6 Slices of Ham warmed
6 Thick slices of fresh tomato fried in butter
6 eggs poached
2 tablespoons red wine vinegar
2 tablespoons extra virgin olive oil
3 tablespoons fresh herbs (basil, thyme, rosemary, parsley, oregeno, etc.)
salt and pepper

Instructions:
Toast the muffins, warm the ham, and fry the tomatoes. Poach the eggs in a pan of boiling water with 2 tablespoons of vinegar added. Warm the olive oil and red wine vinegar and add herbs and salt and pepper.

Assemble the eggs with the muffin on the bottom, then ham, tomato, and egg. Drizzle with vinegarette sauce and serve immediately.
