![]() 6 eggs 2 cups half and half 2 cups grated Cabot sharp cheddar cheese 2 TBL. melted butter dash pepper 5-6 drops (or more) Tabasco sauce 3/4 one cellophane wrapper of Keebler Club Crackers 2 green onions finely sliced Optional ingredients: any one of...crabmeat, imitation crab, crisp crumbled bacon, parboiled broccoli (we love the crab) Instructions: Whisk eggs and stir in next 5 ingredients. Set aside. In a greased 7x11 pan (glass or metal), crumble crackers on bottom. Spread layer of green onion, and crabmeat, bacon or broccoli, then cheese. Pour egg mixture over all and cover with plastic wrap. Refrigerate overnight. Bake at 325 degrees for 45 minutes or until center is set. Do not overcook as it will dry out. Let stand for a few minutes before cutting. This recipe was developed while in Hawaii at our previous B&B Inn, Kokoke Lani. We like to serve with fresh tomato salsa made with diced grape tomatoes, tomatillos, fresh minced garlic, cilantro, salt and pepper. It is also wonderful served with fresh asparagus spears. An easy dish gets raves from our guests! Serves 6 generously or 8 with side dish. Notes: I have also made this in a 10” pie plate. It serves very nicely this way if you want a more ‘quiche’ look on the plates. |
