Ingredients: For Corn Meal Spoon Cake: 8 whole eggs at room temperature, 1 & 1/2 cups granulated sugar 2 tablespoons vanilla extract 1 cup cornmeal 1 cup flour 4 egg whites, beaten to a medium peak, discard yolks 2 ounces tequila 4 ounces honey For Compote: 10 ripe strawberries quartered 1 large papaya, peeled, seeded & diced 2 tablespoons granulated sugar 1 lime, zested & juiced Instructions: Beat the 8 whole eggs in mixer on high speed until doubled in volume. Add vanilla, cornmeal and flour all at once. Mix in. Lightly fold in the beaten egg whites and pour into greased 9 x 9 inch baking dish. Bake in preheated oven at 350 degrees for 20 - 25 minutes, or until slightly firm in center (cake should be soft). Remove from oven and set aside to cool. Meanwhile, warm the honey over hot water and mix in the tequila. Brush the glaze over the top of the cooled cake and let sit for several hours. To Prepare Fruit Compote: Prepare the fruite and mix together and chill. Notes: To serve, spoon cake onto dessert plate or into large martini glasses, top with fruit compote and garnish with whipped cream if desired. |
