Cinnamon Mornings and Chocolate Dreams

Cook Time: 25 minPrep Time: 20 min
Yield: 20 servings 

Ingredients:
1 stick unsalted butter, softened
1 3/4 cups sugar
------------------
4 eggs
----------
1 cup sour cream
------------
4 cups all purpose flour
2 TBS baking powder
2 tsp Salt
2 1/2 tsp cinnamon
1 tsp baking soda
1 tsp allspice
1/2 tsp cloves
---------------
2 cups apple, peeled and chopped

Instructions:
Combine dry ingredients and set aside. Cream butter and sugar in a large bowl, add eggs and beat well. Fold in Sour Cream. Add dry ingredients and fold in - DO NOT OVER MIX. Add apples to dough mixture.

Fill greased muffin cups full and Bake at 400 for 20 - 25 minutes.
Makes 18 - 24 muffins

Notes:
Use a tart apple such as Granny Smith and refrigerate for several hours before peeling and chopping. The apples will retain their shape better while baking.

This muffin cooks very quickly.
