Cinnamon Mornings and Chocolate Dreams

Cook Time: 45 minPrep Time: 15 min
Yield: 8 servingsInactive Prep Time: 8 hr

Ingredients:
2 cups (12 oz) ground fully cooked ham
1/3 cup chopped onion
1/3 cup chopped green pepper
2¨ö cups shredded cheddar cheese
8-7¡± flour tortillas
4 beaten eggs
2 cups milk
1 T flour
¨ù tsp salt
¨ù tsp garlic powder
few drops red pepper sauce



Instructions:
In bowl, combine ham, onion and green pepper. Place ¨÷ cup of the above mixture and 3T cheese at one end of each tortilla; roll up. Arrange tortilla, seam side down in greased 9x13 casserole. Combine remaining ingredients except cheese and pour over tortillas. Cover and refrigerate several hours or overnight. Bake uncovered at 350¨¬ for 45-50 minutes or until set. Sprinkle with remaining cheese. Bake 3 minutes more or until cheese is melted. Let stand 10 minutes. Serve with salsa if desired.


Notes:
This is such a pretty item to serve for a special breakfast! It is wonderful topped with a fruit salsa.
