Ingredients: Dry ingredients: 1/2 cup oatmeal 1/2 cup oat bran 1 1/2 cups flour 1/2 cup sugar 1 tsp salt 1 Tbsp baking powder Wet ingredients: 1 egg, beaten 3/4 cup milk 1/2 cup veg. oil about 1 1/2 cups mixed berries Instructions: In the summer the Skagit Valley produces a tremendous amount of berries, both wild and cultivated, from strawberries to a couple of kinds of raspberries and blackberries. This muffin recipe is one of my most popular. I've also used frozen berries and have even thrown in cranberries, too. Preheat oven to 400 degrees. Grease 12 cup muffin pan. Combine dry ingredients. Mix in egg, milk, oil mixture and berries and stir just till wet and a bit lumpy. Spoon into 12 muffin cups. Sprinkle tops lightly with 1 tbsp sugar and 1/2 cup oatmeal. Bake at 400 degrees for 17-20 minutes. Cool and enjoy. |
