Cinnamon Mornings and Chocolate Dreams

Cook Time: 15 minPrep Time: 20 min
Yield: 4 servings 

Ingredients:
Maple Apples
4 Apples from Cold Hollow Cider Mill
2 T. Cabot butter
¼ tsp. Cinnamon
2 T. Sugar
¼ c. Pure Vermont maple syrup

Waffles
4 Eggs, separated
1 c. Milk
2 c. Flour
¼ c. Cabot butter, melted
2 tsp. Baking powder
1 T. Sugar
1 tsp. Vanilla

Toppings
Ben & Jerry's Ice Cream
Whip cream



Instructions:
Peel and core apples. Slice in thin wedges. Toss in a frying pan along with the above ingredients. Sauté until partially soft but yet firm. Keep warm until waffle is cooked.

Melt butter and set aside. Beat egg yolks and sugar in a bowl until light. Add cooled melted butter, milk and vanilla extract. Add flour, baking powder and beat well. Beat egg whites until stiff and gently fold into batter. Bake in a deep-pocketed preheated waffle iron until cover opens easily. Serve immediately on warm plates. Place maple apples on top of waffle with a big scoop of Ben & Jerry's Ice Cream and whip cream.
