Cinnamon Mornings and Chocolate Dreams

Cook Time: 40 minPrep Time: 10 min
Yield: 10 servings 

Ingredients:
37.5 grm butter
75 ml milk
225 grm mashed potato
1 egg yolk
1 teasp chopped parsley
1/2 teasp cumin
some grated nutmeg
salt and pepper

Instructions:
Prepare the mashed potato. I usually bake potatoes and scoop out the inside. Melt the butter in a saucepan and mix in the milk. Take away from the heat and add the mashed potato followed by the yolk. Mix well. Add the seasonings (parsley, cumin, nutmeg, salt and pepper)
Roll out the mixture on a well floured board. The cakes should end up about 1" thick. Cut out the cakes with a pastry cutter.
Heat a heavy pan and fry the cakes in a small amount of butter until they are golden brown on both sides (turn mid way).

Notes:
This recipe is a bit different to the standard Irish potato cake recipe. It makes really light cakes which are absolutely delicious.
