 Cheese Blintz Casserole Recipe

Yield: 6 servings 

Ingredients:
Batter:
1/2 cup butter, melted
1/4 cup granulated sugar
6 large eggs
1 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 cup orange juice

Filling:
8 ounces cream cheese
15 ounces ricotta cheese
1 large egg
1 tblsp granulated sugar
1 tsp vanilla

Sauce:
2 cups frozen mixed berries, thawed
2 tblsp granulated sugar
1 tblsp cornstarch
1/4 cup orange juice
1 cup fresh berries, in season






Instructions:
Preheat oven to 350 degrees. Lighty oil 13x9 baking dish.

Batter: In medium sized bowl, with electric mixer beat butter, sugar & eggs. Add flour, baking powder, baking soda a& orange juice beating well.

Filling: With electric mixer beat all filling ingredients.

Pour half batter into baking dish. Spoon filling on top, spreading evenly. Spoon remaining batter on top of cheese filling.

Bake approx 50 minutes or until top is firm & golden. Cut into squares, serve with Fruit Sauce.


Fruit Sauce:
In food processor, lighty puree thawed berries. Place in medium saucepan & add sugar, cornstarch & orange juice. Bring to boil over medium-high heat stirring until thick. Remove from heat add fresh berries. Let cool, serve. Refrigerate unused portions.

Notes:
Try preparing the night before and refrigerating. Pop it into the oven the next morning for a delicious breakfast.
