Cinnamon Mornings and Chocolate Dreams

Cook Time: 50 minPrep Time: 15 min
Yield: 6 servings 

Ingredients:
Pastry for one-crust pie
(In a pinch, you can skip the crust – just spray muffins cups well before arranging your fillings in the cups)
1 cup smoked salmon or other seafood Sub: cooked sausage, ham,sautéed veggies
4 ounces cheese
Sub: cheddar or Mexican mixture
1/2 cup mayonnaise (not lite)
4 eggs
1 cup milk (or half and half)
Herbs to taste (fresh are great)
Salt and pepper


Instructions:
Line pie plate with crust.
Fill with cheese, meat or veggie mixture and herbs.
Beat remaining ingredients.
Pour over filling.
Bake in 350 oven until lightly browned and set in the center. About 40 minutes.

This quiche is featured in an online bed and breakfast cookbook. One gentleman asked me to fix it for him….he had made it for his friends at the retirement center. He wanted to be sure he got it right! I’ve made this recipe many times just using whatev
