Cinnamon Mornings and Chocolate Dreams

Cook Time: 15 minPrep Time: 15 min
Yield: 4 servings 

Ingredients:
2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, unbeaten
2 cups buttermilk
2 tablespoons oil
2 bananas, mashed
1 cup walnuts, chopped

Instructions:
Sift together the dry ingredients. Add the eggs one at a time, buttermilk and oil and stir until just mixed. Stir in the bananas. Pour on griddle and add walnuts. Fry in butter over medium heat until dry around edges (they are thick so it takes a while). Turn briefly. Serve with New England maple syrup.
