Cinnamon Mornings and Chocolate Dreams

Ingredients:
4 cups thinly sliced raw cauliflower
1 cup coarsely chopped pitted ripe olives (or green)
2/3 cup coarsely chopped green pepper
½ cup coarsely chopped pimiento
½ cup chopped onion
1 small can whole kernel corn; drained

Dressing
½ cup salad or olive oil
3 Tbsp lemon juice
3 Tbsp wine vinegar
2 tsp salt
½ tsp sugar
¼ tsp pepper
Crisp salad greens


Instructions:
In medium bowl, combine cauliflower, olives, green pepper, pimiento and onion
Make dressing: In small bowl, combine salad oil, lemon juice, vinegar, salt, sugar and pepper. Beat with beater until well blended. Pour over cauliflower.
Refrigerate covered until well chilled; 4 hours or overnight.
To serve – Spoon salad into bowl lined with lettuce.
