Cinnamon Mornings and Chocolate Dreams

Yield: 4 dozen 

Ingredients:
1 cup butter, room temperature
1 cup sugar
1 egg
2 teaspoons lime oil (Boyajian Pure Lime Oil available at specialty cooking stores)
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups flaked coconut
(sugar for dusting before pressing)


Instructions:
Preheat oven to 325 degrees. Cream butter, and gradually add in sugar. Then add oil, and beat egg into mixture, combining thoroughly. Add the coconut, and mix well.

Using a teaspoon, drop a rounded teaspoonful of dough onto parchment paper about 2 inches apart. After tray is full, take a flat bottomed glass, and grease the bottom. Dip into sugar, and press the cookies flat, dipping glass into sugar again before pressing next cookie. Bake for 12 to 15 minutes, careful not to let them brown. Cool on wire rack. These freeze well if stored in a tightly covered container.
