Cinnamon Mornings and Chocolate Dreams

Ingredients: 1/2 cup (1 stick) butter 1 cup brown sugar 2 tablespoons corn syrup 2 tart apples, peeled and sliced 1/4 cup raisins, or try substituting dried cranberries, apricots, cherries, blueberries, etc. 1/4 cup chopped walnuts, or try substituting pecans, almonds, macadamias, etc. 1 loaf sweet French bread, cut into 1 inch slices 5 eggs 1 ¼ cups milk 1 teaspoon vanilla extract Sugar-Cinnamon topping: 3 tablespoons sugar 1 ½ teaspoons ground cinnamon Seasonal Fruits such as strawberries, melons, raspberries, blueberries, kiwis, etc. Instructions: Cook butter, sugar and corn syrup in saucepan over medium heat until it thickens to a syrup consistency. Pour into 9 x 13 inch baking dish that has been prepared with cooking spray. Spread apple slices, dried fruit and nuts over syrup. Place bread on top. Whisk together eggs, milk and vanilla. Pour over bread. Cover and refrigerate overnight. Before baking, preheat oven to 350 degrees. Sprinkle top with mixture of sugar and cinnamon. Bake, uncovered, for 40 – 45 minutes. Remove from oven and allow to cool for 5 minutes. Invert onto a platter (be very careful as it is extremely HOT). Arrange a variety of colorful seasonal fruits around the French Toast and enjoy! |
