Cinnamon Mornings and Chocolate Dreams

Yield: 6 servings 

Ingredients:
6 yolks
1/2 cup sugar
1/4 cup of cornstarch
1 Teaspoon all purpose flour
2 1/4 cups of milk(whole)
1 vanilla bean (split and scraped)
1 Tablespoon of butter

8 egg whites
1/2 cup Orange Juice
2 T Orange liquor
2 t Orange zest
2 Tablespoon sugar
10x sugar

6 medium crepes 6"



Instructions:
Whisk yolks, and 1/2 of the sugar until pale and creamy, sift in cornstarch and flour.
Put milk, remainder of sugar and vanilla bean in saucepan, bring to boil. Strain over egg mixture and whisk quickly, will be lumpy at first but, will smooth out.
Put back in saucepan and bring to a boil, remove from heat, stir in butter.
Add orange juice, zest and liquor to warm pastry cream.
Beat egg whites and sugar till firm peaks, fold in half warm pastry cream to loosen, then fold in remaider of cream.
Arrange crepes on buttered sheet pan, place 2 big spoonfuls of mixture in center of each crepe and fold over without pressing.
Bake for 5 minutes in 400 degree oven. Dust with 10x sugar and serve immediately with fresh berries.

Notes:
When finished with vanilla bean, rinse and let dry then put in your sugar container, it will scent your sugar with vanilla essence.
