Cinnamon Mornings and Chocolate Dreams

 Prep Time: 20 min
Yield: 10  

Ingredients:
Saute:
2 tsp chopped onion and 2 tsp chopped green pepper in 2 Tbsp butter.

Beat together:
10 eggs
1/3 cup milk
1 Tbsp cilantro
salt and pepper

Topping:
1 cup shredded jack cheese
1 cup shredded mild cheddar cheese
1 cup chopped tomato

Instructions:
Pour egg mixture into frying pan and scramble together till done. Place equal amounts of mixture into 10 fajita shells. Add topping.

Fold fajita in half and fasten with a toothpick. Place on lightly greased baking sheet. Bake 8 minutes at 350 degrees until cheese is melted and fajita lightly browned.

Serve with warm, mild salsa.
