Cinnamon Mornings and Chocolate Dreams

Cook Time: 50 minPrep Time: 10 min
Yield: 8 servings 

Ingredients:
2 Tbsp. room temp. butter
1/4 cup honey

1/4 cup brown sugar
4-6 fresh-cut pineapple rings
2 tsp. vanilla
1 cup honey
1/4 cup room temp. butter
1 cup water
2 Tbsp. plain, unsweetned yogurt
2 cups wholewheat flour
1 cup unbleached white flour
4 tsp. baking powder
1/2 tsp. salt

Instructions:
Preheat oven to 350 degrees F. Skin, core, and prep a fresh (sweet-smelling base) pineapple. Melt the first two ingredients together in a baking pan on the stovetop, then add the sugar. Once it begins to caramelize, carefully lay the pineapple rings in the pan. As these are gently cooking on low heat, prep the next ingredients by mixing the wet ingredients first, then slowly adding in the dry and blending until smooth. Remove the pan from the stove and pour the flour mixture over the pineapples, pressing it down with a wet hand. Bake for 45 minutes. As soon as it is done baking, turn it upside down onto a plate and let it rest.
