Cook Time: 15 min 
Yield: 15 servings 

Ingredients:
EGGS
SHORTENING
BANANAS
FLOUR
BAKING SODA
SALT


Instructions:
Recipe:
½ C. Shortening
1 C. sugar
1 tsp. vanilla extract
2 eggs
3 large ripe bananas, mashed
1 ½ C. all purpose flour
1 tsp. baking soda
½ tsp. salt

Cream together the shortening, sugar, and vanilla. Add the eggs and beat well. Blend in the mashed bananas. Add the flour, soda, and salt. Bake in a 350 degree oven in greased and lightly floured muffin pans for about 15 minutes or until brown. Nuts may be added if desired.

Makes about 15 muffins.
