Ingredients: 8 eggs 1/2 cup medium cream 4 ounces lox style smoked salmon, chopped 4 ounces soft goat cheese, such as montrachet, crumbled 1 small shallot finely chopped 1 medium vine ripened tomato, chopped 2 green onions chopped, white and green parts, chopped salt and pepper to taste Instructions: Whisk together eggs & cream. Stir in remaining ingredients and pour into a buttered glass pie plate. Bake at 350 degrees until set. Check the center often with a knife, it may take up to 45 minutes. When the frittata is firm through, remove from the oven and let stand 5 minutes. Slice into wedges and serve with toasted english muffins and fruit. |
