Cinnamon Mornings and Chocolate Dreams

Yield: 1 dozen 

Ingredients:
3 eggs, separated
2 cups buttermilk
2 cups all-purpose flour
1 teaspoon baking soda
1 tablespoon sugar
1/4 cup melted butter, plus butter for serving
maple syrup

Instructions:
Beat the egg yolks in a large bowl until light. Add the buttermilk and beat until smooth. Stir in the flour, baking soda and sugar until well mixed. Do not overbeat; the small lumps will disappear int he cooking. Stir int he melted butter.

Beat the egg whites until stiff. Fold into the batter. Bake on a hot griddle using about 1/3 cup of batter for each pancake, until bubbles form on the top and the underside is nicely browned. Turn the cakes over and brown the other side.

Serve with plenty of butter and maple syrup.
