Ingredients: 4 eggs 1 2/3 cups sugar 1 cup cooking oil 1-15 oz can pumpkin 2 cups sifted flour 1 teaspoon baking soda 1 teaspoon baking powder pinch of salt 2 teaspoons cinnamon 1/2 teaspoon nutmeg Instructions: In large mixing bowl beat together the eggs, sugar, oil, and pumpkin until light and fluffy. Stir in together dry ingredients and add to pumpkin mixture. Spread into greased 15 x 10 x 1 baking pan. Bake at 350 for 25 minutes. Let cool thoroughly. When cool spread with cream cheese topping below. Notes: Cream cheese topping 1-3 oz package cream cheese 1/2 cup butter 1 teaspoon vanilla 2 cups sifted confectioners sugar. Mix above ingredients thoroughly and spread on cool cake. |
